The OLIV Series offers a modern update of the traditional European aesthetic featuring a robust handle crafted from solid olivewood. Forged from high-alloy Swedish 14C28N Steel, these knives are razor sharp, hearty in design, and exceptionally well-balanced.

In addition to breads, bagels, and pastry items, the serrations can pierce and slice through tough-skinned fruits and vegetables, with the 8-inch blade giving ample length to slice even large squashes and melons.
  • Features a robust handle, crafted from solid olive wood with a stunning wood grain, making every knife unique.
  • Handcrafted, partial-tang knives forged from fine-grained, Swedish 14C28N Steel, which features excellent stain resistance, and holds an edge up to five times longer than German steel.

    A grail knife

    I got this spectacular bread knife as a part of the 15-piece set. Like everything Cangshan makes, it is well-balanced, easy to hold and made of unique steel with incredible durability. The serration is sharp as a tiger’s tooth. The olive wood handle is mesmerizing to look at, and so is the strong and shiny blade. This knife glides through sourdough crust and crumb on its own, effortlessly, leaving no damage to the thin (or thick if you rather) bread slices. I am so pleased with my purchase. It gives me pleasure and joy to maintain this masterpiece, which is also so easy: I keep it clean and dry after use and wax or apply olive oil to the handle occasionally. I prefer carefully placing it into the stunning maple block for secure storage. I own Wusthoff, Miyabi, Shun and Zwilling knives, but to me personally Cangshan is the cream of the crop.

    Pretty good bread cutting knife

    We've bought the bread knife made from swedish steel and love the way it cuts old grain (homemade) bread for us. Definitely recommend!
