Product Description

A beautifully-crafted knife that will elevate any kitchen. Exceptionally sharp and striking in design, the full-tang X-7 Damascus steel blade features a hammered texture that looks stunning and allows food to slide right off the blade for easy slicing and dicing. The balanced, durable octagonal handle comes in a rich blue and black faux-wood-grain pattern and is complemented and secured by a single mosaic rivet. Each knife comes with a deep blue wood magnetic Saya-style sheath that is perfectly shaped to protect the knife's distinct blade.

The sashimi knife has a long, narrow blade, similar to those traditionally used in Japanese cuisine to prepare sashimi or sushi. However, this blade shape also lends itself to delicate carving tasks, such as thinly slicing beef, poultry, or cooked fish prior to plating. The 10-inch blade is long enough to slice most fish and other meats but is still a nimble extension of the hand.

  • Hand-sharpened knife
  • Forged from 67 layers of Cangshan proprietary X-7 Damascus Steel
  • 60 +/- 2 Rockwell Hardness Rating
  • G-10 fiberglass octagonal handle
  • Full-tang knife blade with a hammered texture
  • Hand wash only

    Handles

I can purchase the entire blue handle series if it had TV2 handles , the handles are my first preference of consideration of your knives of which I rate the best on the work wide knife market
