  • Each blade goes through an (ultra6) stage heat treatment ensuring every blade maintains its strength and function. Hand sharpened to a 16-degree angle per side.
  • Well balanced 5-inch handle and 2.75-inch blade with HRC 59 +/- 2 on the Rockwell Hardness Scale
  • This peeling knife is shaped like a bird's beak making easy work of peeling and trimming small fruits and vegetables with a rounded surface. It's also ideal for turning vegetables and for making decorative garnish cuts, such as rosettes or fluting.

    Not just for food fanatics

    I've always viewed cooking as a necessary chore. Why would I need fancy knives. When I used a paring knife at a friend's house, I immediately noticed the weight in the handle and how it felt so natural in my hand. I noted the brand, Cangshan, and looked it up at home. Since then I've purchased a paring knife and replaced a few other knives. I bought a vegetable cleaver for the first time - wow, what a difference! Chopping veggies is so easy because I don't need to exert any pressure and it's so much faster. The cleaver does the work, not my arm. I'm a convert.
